All our wines undergo a period of aging on lees, of varying length depending on the nature and composition of the wine, whether in stainless steel or wood. This process adds creaminess, smooth- ness, and roundness, as well as notes of biscuit and pastry that enhance the aromatic palette you can decipher.

We are committed to keeping our wines, both white and red, in contact with oak, as this allows the wines to evolve more slowly, with a more complex and attractive aromatic and taste evolution during their time in the bottle. Spanish oak is one of the stron- gest bets of the winery, although we also use French and American oaks, as well as barrels previously used for Sherry.

The wines will spend no less than a month in the bottle before being labeled and marketed. During this time, the wine adapts to the new reductive conditions where both color and aromas form and stabilize, achieving full integration.
